Mus\u00ed by\u0165 vyroben\u00e1 <strong>z konkr\u00e9tneho druhu bieleho hrozna &#8211; naj\u010dastej\u0161ie Ugni Blanc (zn\u00e1my aj ako Saint-Emilion) a mus\u00ed prejs\u0165 dvojn\u00e1sobnou destil\u00e1ciou v meden\u00fdch n\u00e1dob\u00e1ch a n\u00e1sledne by\u0165\u00a0ulo\u017een\u00e1 minim\u00e1lne dva roky v dubov\u00fdch sudoch<\/strong> poch\u00e1dzaj\u00facich z oblast\u00ed Limousin alebo Troncais. Cognac dozrieva rovnak\u00fdm sp\u00f4sobom ako whisky a v\u00edno v sudoch a v\u00e4\u010d\u0161ina z nich je ulo\u017een\u00e1 dlh\u0161ie ako je minim\u00e1lne po\u017eadovan\u00e1 doba.<\/p>\n<h2>\u010c\u00edm je cognac v\u00fdnimo\u010dn\u00fd?<\/h2>\n<p style=\"text-align: justify;\">Odroda Ugni Blanc je \u0161pecifick\u00e1 t\u00fdm, \u017ee d\u00e1va ve\u013emi kysl\u00e9 v\u00edno, ktor\u00e9 je chudobn\u00e9 na alkohol. M\u00e1 nie\u010do okolo 7.5 a\u017e 10.5%. A preto sa pou\u017e\u00edva iba na v\u00fdrobu Cognacu a nie v\u00edna. Je e\u0161te zop\u00e1r mo\u017enost\u00ed z akej odrody hrozna vyrobi\u0165 Cognac a t\u00fdmi s\u00fa Folle blanche alebo Colombard. Po \u017eatve je hrozno lisovan\u00e9 takzvan\u00fdm nom\u00e1dskym lisom. Toto lisovanie zaru\u010duje, \u017ee sa \u017eiadne semienka alebo ko\u017ea hrozna nedostane do v\u00edna. Zvy\u0161ok, ktor\u00fd obsahuje semienka a ko\u017eu sa pou\u017e\u00edva ako organick\u00fd fertiliz\u00e9r v\u00edn a zvykne by\u0165 destilovan\u00fd na alkohol pre farmaceutick\u00e9 \u00fa\u010dely.<\/p>\n<h2>Ako sa cognac vyr\u00e1ba?<\/h2>\n<p style=\"text-align: justify;\">Aby sme mohli vyrobi\u0165 Cognac, <strong>biele v\u00edno mus\u00ed prejs\u0165 dvojit\u00fdm procesom destil\u00e1cie.<\/strong> Destila\u010dn\u00fd proces sa mus\u00ed\u00a0v\u017edy odohr\u00e1va\u0165 v meden\u00fdch kadiach &#8211; Charentais &#8211; a trv\u00e1 okolo 12 hod\u00edn. V\u00edno je spravidla zohrievan\u00e9 pomocou plynu. V ka\u017edej destil\u00e1cii je odstr\u00e1nen\u00fd prv\u00fd a posledn\u00fd liter a po druhej f\u00e1ze destil\u00e1cie je fin\u00e1lnym produktom takzvan\u00e1 eau-de-vie alebo po slovensky \u017eiv\u00e1 voda. Du\u0161ou tejto tekutiny je 70% alkoholu. Na v\u00fdrobu jedn\u00e9ho litra \u017eivej vody je potrebn\u00fdch 9 litrov v\u00edna, \u010do sa rovn\u00e1 12 kg hrozna.
