Bol zodpovedn\u00fd za v\u00fdrobu v\u00edna a historick\u00e9 pramene tvrdia, \u017ee v roku 1631 nariadil ve\u013emi neskor\u00fd zber hrozna. D\u00f4vodom boli obavy z tureck\u00fdch n\u00e1jazdov. Tento posun v\u0161ak znamenal, \u017ee sa na hrozne vytvorila u\u0161\u013eachtil\u00e1 plese\u0148 \u2013 Botrytis cinerea Persoon, alebo inak Botryt\u00edda.&nbsp;&nbsp;<\/p>\n\n\n\n<p>Tak\u00e9to zbotrytizovan\u00e9 hroznov\u00e9 bobu\u013eky, naz\u00fdvan\u00e9 cib\u00e9by, sa po zbere roz\u0161\u013eapali v kadi a zaliali 136 litrami (objem jedn\u00e9ho Gonczk\u00e9ho sudu) such\u00e9ho samorodn\u00e9ho v\u00edna (niektor\u00e9 historick\u00e9 pramene ud\u00e1vaj\u00fa mu\u0161t) pribli\u017ene v pomere 1:1 tak, aby bolo vyrovnan\u00e9 mno\u017estvo v\u00edna a cib\u00e9b.&nbsp;<\/p>\n\n\n\n<p>Szepsi Laczk\u00f3 M\u00e1t\u00e9 bol tie\u017e dvorn\u00fdm k\u0148azom Zuzany Lorantffyovej (man\u017eelky Juraja I. R\u00e1kozcyho) a hrozno poch\u00e1dzalo z pansk\u00e9ho vinohradu z honu Oremus v S\u00e1toralja\u00fajhely. Tak\u00e9to pr\u00edrodne sladk\u00e9 v\u00edno pod\u00e1val v \u010fal\u0161om roku po\u010das Ve\u013ekej noci na Ve\u010deru P\u00e1na svojej pani, ktorej chcel ulahodi\u0165. A pr\u00e1ve ona nariadila v \u010fal\u0161\u00edch rokoch zber cib\u00e9b, lebo tak\u00e9to pr\u00edrodne sladk\u00e9 v\u00edno pote\u0161\u00ed telo i du\u0161u.&nbsp;&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Je v\u00fdrobn\u00fd proces in\u00fd od be\u017en\u00e9ho v\u00edna?<\/strong>&nbsp;<\/h4>\n\n\n\n<p>L\u00ed\u0161i sa v\u00fdrobn\u00fdm postupom, pri ktorom sa na vy\u0161liapan\u00e9 hrozienka nalieva such\u00e9 v\u00edno. Vylisovan\u00fd produkt sa nech\u00e1 nieko\u013eko rokov dozrieva\u0165 v sude, \u010do nazna\u010duje, \u017ee sa tak\u00e9to v\u00edna vyr\u00e1baj\u00fa oxida\u010dnou met\u00f3dou. Tieto odrody sa pestuj\u00fa vo Vinohradn\u00edckej oblasti Tokaj, ktor\u00e1 je preva\u017ene situovan\u00e1 na severov\u00fdchode Ma\u010farska, no malou \u010das\u0165ou zasahuje aj juhov\u00fdchod Slovenska. Ozna\u010denie Tokaj sa m\u00f4\u017ee pou\u017e\u00edva\u0165 iba na v\u00edna vyroben\u00e9 v rovnomennom meste\u010dku Tokaj.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>M\u00f4\u017ee sa tokajsk\u00e9 v\u00edno pestova\u0165 aj v in\u00fdch oblastiach, napr\u00edklad v Modre?<\/strong>&nbsp;<\/h4>\n\n\n\n<p>Tradi\u010dn\u00e9 tokajsk\u00e9 odrody sa m\u00f4\u017eu pestova\u0165 aj mimo tokajskej oblasti, aj by sa im darilo, len by nedosahovali tak\u00fa ist\u00fa kvalitu ako v dom\u00e1com prostred\u00ed. Furmint dozrieva v priebehu okt\u00f3bra, hlavne po\u010das babieho leta.&nbsp;&nbsp;<\/p>\n\n\n\n<p>Lipovina dozrieva tie\u017e v okt\u00f3bri, ale na rozdiel od Furmintu sa na tejto odrode vytv\u00e1raj\u00fa cib\u00e9by v ove\u013ea men\u0161ej miere. M\u00e1 riedke dlh\u00e9 strapce, ktor\u00e9 dosahuj\u00fa d\u013a\u017eku a\u017e do 50 cm. Listy maj\u00fa srdcovit\u00fd tvar, tak ako lipov\u00e9 listy stromu. Aj preto dostala n\u00e1zov Lipovina.&nbsp;<\/p>\n\n\n\n<p>Mu\u0161k\u00e1t \u017elt\u00fd sa vyzna\u010duje zlato-\u017eltou farbou a pri dozrievan\u00ed aj prenikavou v\u00f4\u0148ou. Je to najaromatickej\u0161ia odroda medzi tokajsk\u00fdmi druhmi. Zber prebieha u\u017e v strede septembra a \u010diasto\u010dne sa vytv\u00e1raj\u00fa na strapci aj cib\u00e9by.&nbsp;<\/p>\n\n\n\n<p>\u0160tvrt\u00e1 tokajsk\u00e1 odroda, Zeta, dozrieva u\u017e v septembri, kedy dosahuje a\u017e 27 \u00b0NM cukornatosti. T\u00fdm, \u017ee t\u00e1to odroda vznikla kr\u00ed\u017een\u00edm Furmintu a Bouvierovho hrozna, m\u00e1 tenk\u00fa \u0161upku a vytv\u00e1raj\u00fa sa na nej cib\u00e9by, podobne ako pri Furminte. Skor\u00e9 dozrievanie a r\u00fdchly n\u00e1stup cukornatosti zdedila po Bouvierovi.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Ktor\u00fa m\u00e1te najrad\u0161ej, alebo sa u v\u00e1s najviac pred\u00e1va?<\/strong>&nbsp;<\/h4>\n\n\n\n<p>Najviac pred\u00e1van\u00e1 je najm\u00e4 odroda Furmint, a to kv\u00f4li \u013eahkosti a plnosti v\u00edn. Put\u0148ov\u00e9 v\u00edna s\u00fa tie\u017e ve\u013emi ob\u013e\u00faben\u00e9. Pri degust\u00e1cii m\u00f4\u017eeme c\u00edti\u0165 su\u0161en\u00e9 plody a jemn\u00fa mikrooxid\u00e1ciu, ktor\u00e1 napom\u00e1ha rovnov\u00e1he chut\u00ed. Pred\u00e1van\u00e9 s\u00fa o \u010dosi menej, kv\u00f4li vy\u0161\u0161ej cene. Ja osobne preferujem vyzretej\u0161ie v\u00edna star\u0161\u00edch ro\u010dn\u00edkov, napr\u00edklad such\u00e9 samorodn\u00e9 alebo put\u0148ov\u00e9 tokajsk\u00e9.&nbsp;&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Ak\u00fa rolu hraj\u00fa putne?&nbsp;<\/strong>&nbsp;&nbsp;<\/h4>\n\n\n\n<p>S\u00fa neoddelite\u013enou s\u00fa\u010das\u0165ou v\u00fdroby, aj prv\u00e9 tokajsk\u00e9 v\u00edno bolo vyroben\u00e9 za pomoc\u00ed putn\u00ed. Putne s\u00fa dreven\u00e9 n\u00e1doby, do ktor\u00fdch sa zmest\u00ed a\u017e 25 kilogramov cib\u00e9b. V\u00fdznamn\u00fa rolu tu zohr\u00e1va aj pojem Gonczk\u00fd sud, ktor\u00fd som spom\u00ednal u\u017e na za\u010diatku. \u0160tandardne sa 3, 4, 5, 6 putn\u00ed cib\u00e9b zalievaj\u00fa v\u017edy 136 litrami v\u00edna (\u010do predstavuje presne jeden Gonczk\u00fd sud a tento objem v\u00edna je pri v\u00fdrobe kon\u0161tantn\u00fd). Tak\u00e9to v\u00edna potom zrej\u00fa pod\u013aa po\u010dtu putn\u00ed 3, 4, 5, alebo 6 rokov v sude.&nbsp;<\/p>\n\n\n\n<p>Ak rob\u00edme put\u0148ov\u00e9 v\u00edna, pod\u013ea po\u010dtu putn\u00ed sa rozde\u013euj\u00fa akostn\u00e9 triedy t\u00fdchto v\u00edn. Ak sa na v\u00fdrobu v\u00edna pou\u017eij\u00fa 3 putne, ozna\u010dujeme ho ako trojput\u0148ov\u00e9. Pozn\u00e1me troj a\u017e \u0161es\u0165put\u0148ov\u00e9 tokajsk\u00e9 v\u00edna. Ak si nie sme ist\u00ed, najlep\u0161ie je vyh\u013eada\u0165 si str\u00e1nku vin\u00e1rstva a pozrie\u0165 nejak\u00e9 hodnotenia, ako odborn\u00e9, tak laick\u00e9.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>M\u00e1 zmysel pozera\u0165 aj na ocenenia? S\u00fa tie z\u00e1rukou kvality?<\/strong>&nbsp;<\/h4>\n\n\n\n<p>Medaile m\u00f4\u017eu by\u0165 z\u00e1rukou, no z\u00e1le\u017e\u00ed, na ak\u00fdch degust\u00e1ci\u00e1ch dostalo v\u00edno ocenenie. Vin\u00e1rske degust\u00e1cie so z\u00e1merom ude\u013eovania ocenen\u00ed b\u00fdvaj\u00fa na r\u00f4znych \u00farovniach. Ak sa jedn\u00e1 o medzin\u00e1rodn\u00e9 prest\u00ed\u017ene degust\u00e1cie, s ve\u013ekou pravdepodobnos\u0165ou sed\u00ed pri hodnotiacom h\u00e1rku skuto\u010dn\u00fd odborn\u00edk na v\u00edno. Na men\u0161\u00edch z\u00e1hradk\u00e1rskych v\u00fdstav\u00e1ch v\u00edn n\u00e1jdeme za hodnotiacim stolom miestnych vin\u00e1rov bez odbornej\u0161ej praxe a so subjekt\u00edvnym n\u00e1zorom na cudzie v\u00edna.
