Vstupn\u00fdm materi\u00e1lom do t\u00fdchto procesov je zvy\u010dajne ovocie, rastlinn\u00e1 \u0161\u0165ava alebo zrno, ktor\u00e9 obsahuje \u0161krob.<\/p>\n<h2>Ako sa vyr\u00e1ba p\u00e1lenka?<\/h2>\n<p>V\u00fdroba p\u00e1lenky je teda zalo\u017een\u00e1 na kvasen\u00ed, \u010do je prirodzen\u00fd rozklad organick\u00e9ho materi\u00e1lu na sacharidy. Tento proces je \u010disto pr\u00edrodn\u00fd a doch\u00e1dza k nemu vtedy, ak s\u00fa pr\u00edtomn\u00e9 dve nevyhnutn\u00e9 ingrediencie, sacharidy\u00a0a kvasinky. Kvasinky s\u00fa vegetat\u00edvne mikroorganizmy, ktor\u00e9 \u017eij\u00fa a rozmno\u017euj\u00fa sa na materi\u00e1loch, ktor\u00e9 obsahuj\u00fa sacharidy &#8211; predov\u0161etk\u00fdm jednoduch\u00e9 cukry. Existuj\u00fa po celom svete, okrem zamrznut\u00fdch a p\u00fa\u0161tnych \u00fazem\u00ed.<\/p>\n<p>P\u00e1lenka je v podstate ka\u017ed\u00fd alkoholick\u00fd n\u00e1poj, v ktorom je koncentr\u00e1cia etyl alkoholu zv\u00fd\u0161en\u00e1 pomocou procesu destil\u00e1cie kvasu. Jej princ\u00edp spo\u010d\u00edva v r\u00f4znom varnom bode alkoholu a vode. Alkohol toti\u017e vrie pri 78 stup\u0148och celzia a\u00a0to mu umo\u017e\u0148uje sa separ\u00e1tne odpari\u0165\u00a0od vody. Jeho kondenz\u00e1t je n\u00e1sledne st\u00e1\u010dan\u00fd do flia\u0161.<\/p>\n<h3><strong>Recept na v\u00fdrobu p\u00e1lenky v 5 krokoch<\/strong><\/h3>\n<ol style=\"font-size: 18px; line-height: 27px;\">\n<li><strong>Pr\u00edprava kvasu:<\/strong> Kvas sa pripravuje len z jednej odrody ovocia. Pozor nie z druhu! Napr. hru\u0161ky odrody Villiams, slivky Stanley, jablko Gala a podobne. Je potrebn\u00e9 docieli\u0165 jednotn\u00fa harm\u00f3niu chuti a v\u00f4ne, nie zmes chut\u00ed a v\u00f4n\u00ed.<\/li>\n<li><strong>Kvasenie:<\/strong> Mus\u00ed by\u0165 riaden\u00e9. Znamen\u00e1 to, \u017ee cel\u00fd proces kvasenia sa umelo usmer\u0148uje, a to nastaven\u00edm jednotnej teploty kvasenia, pridan\u00edm \u0161peci\u00e1lne vy\u0161\u013eachten\u00fdch kvasiniek, enz\u00fdmov a v\u00fd\u017eivy a \u00fapravou pH (kyslosti) kvasu. Mus\u00edme pozera\u0165 na body varu etanolu &#8211; 78,3 \u00baC a vody &#8211; 100 \u00baC. Odpor\u00fa\u010dame pracova\u0165 so zariaden\u00edm s teplomerom.\u00a0<\/span>\u00a0Myslite tie\u017e na to, \u017ee pri destil\u00e1cii kvasu sa nem\u00e1 \u017eiada\u0165 maxim\u00e1lna v\u00fd\u0165a\u017enos\u0165, ale kvalita. Menej je niekedy viac. \u010c\u00edm viac sa oddelia pribudliny (aldehydy, estery kysel\u00edn) od jadra destil\u00e1tu, t\u00fdm je destil\u00e1t kvalitnej\u0161\u00ed.<\/li>\n<li><strong>Dozrievanie (starnutie):<\/strong> Destil\u00e1t potrebuje svoj \u010das. Mlad\u00fd destil\u00e1t potrebuje dostato\u010dn\u00fd \u010das na to, aby sa zagu\u013eatil a zjemnila sa jeho ostr\u00e1 chu\u0165.
